Grilled (Broiled) Salmon with Balsamic Glaze Soft mustard, honey, fresh pepper and pineapple in a recipe that aims to impress you!

GRILLED (BROILED) SALMON WITH BALSAMIC GLAZE

INGREDIENTS
  • A few drops of flavourless vegetable oil (sunflower etc)
  • 500 gr fresh salmon fillet, skin on (2 pieces)
  • 1 ½ tblsp honey
  • 2 tsp TOP balsamic vinegar
  • 1/2 tsp mustard, mild Dijon
  • 1/8 tsp garlic paste
  • 1/8 tsp white pepper, freshly cracked
  • 2 rings of pineapple, canned, cut into approx. 8-10 pieces each (optional)

EXECUTION

  1. Line a baking sheet with some aluminum foil. Pinch the corners so that the edges come up and form a border, to catch the fish juices during cooking. Add a few drops of oil to the foil and spread with your fingers so it goes all over the surface where you will place the fish.

  2. In a small bowl mix the honey, TOP balsamic vinegar, mustard, garlic paste and white pepper. Whisk with a fork till smooth. Place the salmon fillets on the foil, skin side down, and brush the top and sides with glaze. Put pieces of pineapple on top.

  3. Cook under a very hot, preheated grill (broiler), on the second rack. After 10 minutes take the baking sheet out and brush more glaze over the top, covering the pineapple too. Grill for another 4-8 minutes, depending on the thickness of the fillets. Don’t overcook so as not to dry out the fish.

  4. Serve with rice, asparagus or other steamed vegetables, green salad or mashed potatoes.

Tip
Try to get fillets that are the same thickness across the entire length. If a fillet has one side much thinner than the other, just fold it in under itself so it doesn’t burn.
If desired, make a double batch of the glaze and use it as a sauce for your side dishes.
