PURSLANE FETA CHEESE SALAD WITH TOP APPLE BALSAMIC VINAIGRETTE

INGREDIENTS
  • 2 bunches thickly chopped purslane
  • 1 baby rocket
  • 10 cherry tomatoes cut in half
  • 100 gr grated Horio Feta cheese
  • 10 capers leaves
  • 1 small cucumber cut in frames
  • 1 finely chopped spring onion
  • 40 ml TOP Apple Balsamic Vinegar
  • 90 ml Horio Sustainable olive oil
  • 1 garlic clove
  • 1 tsp finely chopped fresh oregano
  • Salt, pepper

EXECUTION

  1. Prepare vinaigrette: Mix TOP Apple Balsamic Vinegar, Horio Sustainable olive oil, garlic and oregano with a hand blender. Spice lightly.

  2. In a bowl put all ingredients, add TOP Apple Balsamic Vinaigrette, mix well and serve.
