PORK CROWN WITH TOP BALSAMIC CREAM BARBEQUE SAUCE

INGREDIENTS

FOR THE MEAT

  • 2.800 gr por, bones in
  • 4 tbsp brown sugar
  • 5 tbsp salt
  • 2 tbsp sugar
  • 3 tbsp pepper grains
  • 4 bay leaves
  • 7 twigs rosemary, leaves only
  • juice and peel of an orange

FOR BARBEQUE SAUCE

  • 1 finely sliced onion
  • 1 finely sliced garlic clove
  • 100 gr TOP Balsamic Cream Barbeque
  • 400 gr ketchup
  • 1/2 tsp pepper
  • 3 tbsp Horio Mountain Regions olive oi

EXECUTION

  1. Prepare the meat: Ask butcher to clean the meat and cut it in pieces.

  2. Put all ingredients in a blender except for orange juice. When finely beaten, scrub meat with the marinade all over. Squeeze orange over the meat and spread the juice. Refrigerate with the marinade for 6-8 hours.

  3. Preheat oven at 150 C fan and place meat on a rack over a pan. Bake for 90 – 120 minutes.

  4. Once meat is ready, remove from oven and raise temperature at 180C. Brush bbq sauce all over the meat.

  5. Put meat in the oven again and bake for 10 minutes. Brush again and bake for another 20 minutes until caramelized.

  6. Let it rest for 10 minutes and serve.

  7. Prepare BBQ sauce: Put a deep pan over medium heat. Add 3 tbsp Horio Classic olive oil and onion. Cook until caramelized and add garlic.

  8. Add TOP Balsamic Cream Barbeque and cook for 2 minutes. Put rest of the ingredients and simmer until sauce thickens.

  9. Put sauce in a blender and mix until smooth.
