SWEET AND SOUR RIBS WITH TOP BALSAMIC CREAM WITH HONEY AND LEMON GLAZE

INGREDIENTS
  • Approximately 24 ribs (2 series of ribs)
  • Kosher salt
  • 4-6 fresh thyme twigs

FOR GLAZE:

  • 1 ½ cup TOP Balsamic Cream with Honey and Lemon
  • 1 cup ketchup
  • ½ can beer
  • ½ tbsp crushed garlic
  • ½ cubed red onion
  • ¼ cup brown sugar
  • ½ tbsp molasse
  • ¼ cup grainy mustard
  • 1 tsp Tabasco
  • ½ tbsp worcestershire sauce
  • ¼ cup water

EXECUTION

  1. Preheat oven at 120C.

  2. Put each series of ribs in aluminum foil.

  3. Season generously with salt, place thyme sprigs in each package and fold tightly.

  4. Put rib packages in a baking sheet and bake for 3-4 hours until very soft.

  5. Let cool before unfolding each aluminum foil.

  6. For glaze: Put TOP Balsamic Cream with Honey and Lemon, ketchup, beer, garlic, onion, brown sugar, molasse, mustard, Tabasco, Worcestershire sauce and water in a large pot and simmer over medium-low heat for a few hours, occasionally stirring, until sauce thickens.

  7. Leave aside.

  8. Preheat oven at 230C.

  9. Separate ribs, put in a baking sheet layered with aluminum foil and brush generously with glaze.

  10. Bake for 4-5 minutes.

  11. Serve.
