Squid stuffed with tomato sauce Dimitris Skarmoutsos creates a fine recipe with our favorite seafood and TOP Balsamic Cream Tomato and Herbs!

SQUID STUFFED WITH TOMATO SAUCE

INGREDIENTS
  • 1/2 c Horio Classic olive oil, plus 2 tbsp
  • 1/4 tsp oregano
  • 2 finely sliced garlic cloves
  • 1/2 small onion, finely sliced
  • 2 tbsp tomato paste
  • 4 tbsp red wine
  • 1 bay leaf
  • 2 tbsp TOP Balsamic Cream Tomato and Herbs
  • 1/2 can tomatoes with their juice
  • 12 cleaned squid
  • 1 c bread crumb (pith)
  • 1 c pecorino cheese, grated
  • 3 tbsp finely cut parsley
  • 2 tbsp grated oregano
  • salt
  • freshly grounded black pepper

EXECUTION

  1. In a deep frying pan, over medium-high heat, put 2 tbsp Horio Classic olive oil.

  2. Add oregano, garlic and onions and cook until soft, for about 6 minutes.

  3. Add tomato paste and cook until caramelized, for 2 minutes.

  4. Put 3 tbsp wine and bay leaf and cook for 20 minutes over low heat.

  5. Mix the rest of the wine with TOP Balsamic Cream Tomato and Herbs, the salt and pepper.

  6. Leave aside.

  7. Preheat the oven at 180C and heat rest of olive oil in a pan over medium fire.

  8. Slice tentacles and add in the pan. Cook for 1 minute.

  9. Remove from fire and mix with bread crumb, pecorino cheese, parsley and oregano.

  10. Sprinkle with salt and pepper.

  11. Half-fill every squid with the mixture and arrange in a baking sheet 9x13cm.

  12. Drizzle sauce over squid and bake for 30 minutes.
